This is the most complex lesson
Dedicated to those who want to learn the processing techniques to transform ideas and raw materials into true signature dishes.
You will learn to carefully choose the ingredients and to master the tools and techniques of the trade, with attention to the different methods of storing, cleaning, cutting and cooking food.

  • Aperitif with finger food
  • Stuffed squid on bread and mussels cream
  • Agnolotti stuffed with asparagus, bacon and Carbonara foam
  • Duck breast marinated in green pepper, duet of carrots and demi glacé
  • Gianduia parfait, hazelnut and black cherry crumble

The menus may vary according to the seasonal availability of the products

What is included in the lesson
  • Assistance from our staff for the duration of the cooking lesson, including the meal (about 5 hours)
